High in protein and fiber, the carbs are slow burning so you don’t get hungry for hours (when I eat rice pasta I am hungry again quickly).The trick is DO NOT OVERCOOK. Take out of pan while still notably al dente, and it will have a texture like wheat pasta. If you cook too long it rapidly gets mushy.Of all the gluten free pasta I have tried, this is the closest to Italian durum wheat pasta.
